Protein Bean Soup – Recipe of the Week
This week we present to you a filling and flavourful protein bean soup that is perfect to refuel after a workout. It contains a marvellous mixture of healthy ingredients that make for a real winter warmer in these colder months. What’s more, it is a vegan option that leaves you feeling full for quite a while and can be made in batches to store in the fridge or freezer for when you need a tasty and healthy option.
Recipe Ingredients List
- Black Eyed Peas (400g tin)
- Barley (125g)
- Green Lentils (125g)
- Spinach (125g)
- Coriander (125g)
- Parsley (125g)
- Onion (one large)
- Garlic (three cloves)
- Dry Mint (one tablespoon)
- Turmeric (one tablespoon)
Cut up the onion and garlic into small pieces and fry these together in a pan with some oil. After they have fried, add in the dry mint and turmeric and stir everything together with a dash of water.
Add all of the other ingredients too and then add water until all of the ingredients are covered in water. Stir everything together and then bring everything to a boil. Turn the heat down and leave everything to simmer with a lid over the frying pan.
When most of the water has been absorbed into the ingredients, your protein bean soup is ready to serve and enjoy! At this stage you can choose to add the likes of fresh lime juice, vinegar, salt and pepper or chilli flakes depending on the kick of flavour you would like!
