Coconut Rice Salad

A dish that can be eaten hot or cold, the coconut rice salad can work great as a side dish for your summer barbecues or even as a main dish. It is light and refreshing while also a different take on a salad as there are no lettuce leaves involved. With only eight ingredients, most of which you are sure to already have at home, it is a simple and straightforward recipe packed full of flavour and fresh bursts of coconut, coriander and lime.

Recipe Ingredients List
Basmati Rice (90g)
Bell Pepper (one)
Carrot (one)
Desiccated Coconut (8g)
Fresh Coriander (one tablespoon)
Lime Juice
Lime Zest
Spring Onions (three)

Step 1.
Cook the rice until it is light and fluffy / according to the packet instructions. If you like your rice to be a little firmer or al dente, you can choose to cook it this way too.

Step 2.
Finely chop the bell pepper, carrot and spring onions and mix these all together with the fresh coriander, lime juice and lime zest.

Step 3.
Combine the rice from step 1 with the ingredients from step 2, stir together in a serving dish and then sprinkle the desiccated coconut over the top.

You can choose to serve it warm / hot as as soon as the rice is cooked – or when it cools down, store it in the fridge and serve cold later.
