Wholemeal Raisin Pancakes – Recipe of the Week

Wholemeal Raisin Pancakes
Recipe Ingredients List
- Raisins (if using) (125g)
- Wholemeal Plain Flour (110g)
- Soft Brown Sugar (one tablespoon)
- Ground Cinnamon (one and a half teaspoons)
- Baking Powder (one teaspoon)
- Bicarbonate of Soda (half a teaspoon)
- Eggs (two)
- Semi-Skimmed Milk (250mls)
Step 1
If using raisins, place them in a bowl and, pour in 250ml of boiling water and then cover the bowl. Leave these to steep for between one to two hours and then drain well.
Step 2
Sift the wholemeal plain flour into a large bowl and following this, sift in the soft brown sugar, ground cinnamon, baking powder and bicarbonate of soda too.
Step 3
Make a well in the centre of the sifted dry ingredients, mix the eggs and milk together in a jug and then pour this into the well. Stir everything together to form a batter. If using raisins, you can also stir these in now.
Step 4
Heat a frying pan to a low to medium heat and then add a drizzle of olive oil to it. Once the oil has heated up too, add a ladle (around 125ml) of pancake batter to the pan and cook on both sides until golden brown.
