Vegetarian Breakfast Bake – Recipe of the Week

This vegetarian breakfast bake is healthy way to start your day – but you can also make it as a snack or lunch option too. It combines the lean protein of eggs with nutritious vegetables that are baked together for a tasty meal that will really feel like a treat.

Recipe Ingredients List

  • Eggs (three)
  • Tomatoes (two)
  • Mushrooms (two medium)
  • Spinach (100g)
  • Garlic (half a clove clove)
  • Olive Oil (one tbsp)

Step 1
Heat the oven to 180° and dice up the tomatoes and mushrooms. Add these to an ovenproof dish (or even a couple of ramekins) along with the half garlic clove (thinly sliced), the olive oil and optional salt and pepper for seasoning. Bake this in the oven for ten minutes.

Step 2
Place the spinach leaves into a colander and pour boiling water over them to make them wilt. Drain and squeeze out any excess water, chop the leaves a bit so they become smaller and then add them to the dish along with the tomatoes and mushrooms (after you have removed it from the oven).

Step 3
Using a spoon, make some gaps in between the current contents of the dish and then crack the two eggs into the dish. Use the spoon to ensure the egg mixes through with the ingredients and then return to the oven to cook for a further eight to ten minutes (or until the egg is cooked to your liking). Serve and enjoy!
