Sweet and Sour Pork – Recipe of the Week
Shape My Plan here present a healthy and tasty meal option in the form of sweet and sour pork. A mixture of lean meat, fresh vegetables and sweet and sour flavours, it makes a great dinner idea, a post-workout refuel meal or can even be divided into lunch portions.
Sweet and Sour Pork
Recipe Ingredients List
• Pork Fillet (100g)
• Basmati Rice (100g)
• Pineapple Rings (one can in natural juice)
• Red Pepper (half)
• Yellow Pepper (half)
• Small Onion (one)
• Garlic (one clove)
• Root Ginger (one teaspoon)
• Coconut Oil / Olive Oil (half a tablespoon)
• Ground Black Pepper
On a chopping board, cut the pineapple rings, red pepper, yellow pepper, onion, garlic and fresh root ginger into small chunks.
On a separate chopping board, chop the pork into small cubes and make sure to cut and trim away any of the excess visible fat.
Heat the coconut oil / olive oil in a wok over a medium heat. Once heated up, add the cubes of pork to the wok and stir fry for five to ten minutes / until cooked and golden all over.
Add the pineapple, red pepper, yellow pepper, onion, garlic and ginger to the wok too. At this stage, add some of the pineapple juice for the can of sliced pineapples too (as much as you would like to achieve your preferred consistency).
Stir and cook this over a medium heat for one to two minutes until the sauce thickens and coats all of the pork and vegetables.
Cook the basmati rice as per the instructions on the packet and then serve with the sweet and sour pork and vegetables from the wok. Season with ground black pepper if desired.
