Protein Pancakes – Recipe of the Week
Of course you can indulge in traditional pancakes this upcoming pancake Tuesday on the 5th of March. But for those who may want to weave this wonderful treat into their health and fitness goals, Shape My Plan here present a perfect protein pancakes recipe! Ideal for you to enjoy without having to disrupt your dietary goals in a major way.
Recipe Ingredients List
- Banana (one)
- Egg (one)
- Vanilla Protein Powder (30g)
- Rolled Oats (25g)
- Coconut Oil (one tbsp)
- Fat Free Greek Yoghurt (two tbsp – optional for the side)
- Fresh Berries (handful – optional for the side)
To make the batter, roughly chop up the banana into small chunks and add them then to a mixing bowl. Mix in the egg, the vanilla protein powder and the rolled oats.
Add the tablespoon of coconut oil to a frying pan and heat this open over a medium heat. When melted, make sure that it covers the entire surface of the frying pan.
Use a ladle to ladle the protein pancake batter from the mixing bowl into the frying pan. When the bottom side is cooked (use a spatula to see that it has become a nice golden-brown colour), use a spatula to turn the pancake over – or try the traditional flipping method!
One cooked, you can choose to serve your protein pancakes with spoons of fat free Greek yoghurt and / or a handful of fresh berries (blueberries, raspberries, strawberries etc.).
