Lemon Chicken Skewers – Recipe of the Week

While skewers are traditionally associated with barbeques and the summertime, there is nothing stopping you from enjoying them at home at any time of year. Here we show you how to make lemon chicken skewers which are grilled and served with a side salad so that they are low in fat and high in protein and flavour. The use of lemon juice also adds additional health benefits to this recipe such as a dose of vitamin C, improved digestion and healthy hydration!

Recipe Ingredients List

  • Chicken Fillets (two)
  • Lemons (two)
  • Lettuce Leaves (handful)
  • Dried Mixed Herbs (half a teaspoon)

Step 1  
Cut the chicken fillets into medium sized chunks, place these onto skewers and then put these onto a flat baking tray lined with greaseproof paper.


Step 2  
Using a zester, get the zest from both of the lemons and also juice both of these lemons so that you have a cup of fresh lemon juice. Stir half a teaspoon of dried mixed herbs in with this lemon juice and then using a brush, brush the top of each of the chicken chunks with this juice and herb mixture. Pat some of the lemon zest onto the tops of the chicken chunks too.


Step 3  
Place the chicken chunks under the grill on a medium heat for seven to ten minutes. After this time, remove the tray and using a tongs, flip each piece over so that the cooked parts are upside down. Using the brush again, repeat the process of brushing the lemon juice and herbs on the tops of the chicken – followed by patting some lemon zest into them.


Step 4  
Place the chicken back under the grill on a medium heat for seven to ten minutes. While this is cooking, wash your lettuce leaves of choice (iceberg or Romaine etc.), cut them up and arrange them on a plate.


Step 5
Make sure that the chicken is fully cooked by cutting a couple of chunks open. The flesh should not have any pink inside and the juices should run clear. If needs be, place them back under the grill on a medium heat to finish cooking. Once ready, lay them on top of the lettuce leaves and season with salt, pepper and lemon juice if desired.
