Chilli Con Carne – Recipe of the Week

It’s that time of year again when we want some winter warmer recipes that not only make us feel good, but also keep our health and fitness goals in check. This chilli con carne recipe by Shape My Plan fits the bill perfectly and so we present it here as a recipe you can rely on to power up before the gym, refuel afterwards or even portion for some healthy lunch options!

Chilli Con Carne

Recipe Ingredients List

  • Lean Minced Beef (500g)
  • Chopped Canned Tomatoes (400g)
  • Canned Kidney Beans (400g)
  • Basmati Rice (350g)
  • Garlic (two cloves)
  • Onion (one – medium)
  • Jalapeño Peppers (30g)
  • Tomato Paste (two tablespoons)
  • Coriander (two tablespoons)

Step 1
Add a dash of olive oil to a large pan and heat it over a medium heat (or use a non-stick pan if possible) and then place the minced beef into it. Use a wooden spoon to break up the meat so that it cooks through evenly.


Step 2
Cut up the onion and cloves of garlic and add these to the pan when the mince starts to brown and release juices and fat. Fry this gently for the next seven to ten minutes – making sure that everything cooks evenly and does not burn.


Step 3
After the meat has browned all over, add in the tomatoes, the tomato paste and the jalapeños (you can chop these up first – or even leave them out completely if you want the dish to be less spicy).


Step 4
Bring everything to a boil and then add the kidney beans after you have drained and rinsed them. Cover the pan and let is simmer for between twenty to twenty-five minutes so that the sauce thickens.


Step 5
While the pan is simmering, cook the basmati rice as per the packaging instructions (either by boiling or microwaving) and time it so that it is cooked by the time the pan of mince is also ready. Serve the rice, sauce and meat together and garnish with some freshly chopped parsley if desired.
