Recipe Ingredients List
- Salmon Fillets (two)
- Onion (one – small)
- Bell Pepper (one)
- Broccoli (handful)
- Green Beans (handful)
- Spinach (handful)
- Fresh Ginger (1cm piece)
- Garlic Clove (half)
- Soy Sauce (two tablespoons)
- Honey (one tablespoon)
- Olive Oil (half a tablespoon)
Finely chop the garlic, grate the ginger and combine these together with the honey and soy sauce. Into a Ziploc back, add these along with the salmon fillets and ensure that the fish is fully surrounded by the marinade. Leave this in the fridge for at least two hours.
When ready to cook the salmon, preheat the oven to 180°, remove the salmon from the bag and place it on a baking try lined with tin foil. This needs to bake for between twelve to fifteen minutes until fully cooked through.
Heat the oil in a frying pan over a medium heat and after you have chopped up the bell pepper, broccoli, green beans, onion and spinach; add these to the pan and stir fry them for between five to ten minutes until fully cooked but crisp (i.e. you do not want to them to be either limp and soggy or burnt).
Serve the stir fried vegetables together with the salmon on a plate and you can chose to garnish the dish with a splash of soy sauce and salt and pepper if desired.
