Chicken Tacos – Recipe of the Week

A summery and healthy treat, chicken tacos are simple to make and can be used as a lunch, dinner or snack option! Learn how to make them here in four easy steps with only a handful of ingredients.

Recipe Ingredients List

  • Soft Shell Tacos (three)
  • Chicken Fillets (two)
  • Sweetcorn (75g)
  • Tomato (one)
  • Mayonnaise (two tablespoons)
  • Paprika Powder (two teaspoons)
  • Rocket Leaves (handful)

Step 1
Preheat the oven to 200°. Place each chicken fillet onto separate sheets of tin foil, sprinkle one teaspoon of paprika powder between them, curl the edges of the tin foil up and bunch them together at the top so that they form a parcel around each fillet. Place these on a baking tray and let them cook in the oven for twenty minutes.

Step 2
Chop up the tomato into small chunks and then in a bowl mix this together with the sweetcorn, teaspoon of paprika powder and two tablespoons of mayonnaise.

Step 3
Warm the soft shell tacos under a grill for nothing more than a couple of minutes. When the chicken is cooked (make sure the meat is not pink inside and that any juices that come from it are clear); chop it up into chunks and mix this in with the bowl of ingredients from step two also.

Step 4
Spoon this mixture into each of the soft shell tacos and garnish them with a handful of rocket leaves to add some welcome greenery and a nice peppery flavour. Serve and enjoy!
