Broccoli and Pesto Pasta – Recipe of the Week

This broccoli and pesto pasta recipe is perfect if you need a hit of energy while also looking to get in some vegetables and greenery at the same time. Made from healthy ingredients that you are sure to have at home, it makes for an excellent option for either lunch or dinner. Choose it to fill up sensibly and to replenish your energy stores so that you can give it your all the next time you come to workout at Westpark Fitness!

Broccoli and Pesto Pasta

Recipe Ingredients
• Pasta (175g – conchiglie ideally)
• Broccoli (150g frozen florets / one third of a fresh head)
• Pesto (two tablespoons)


Step 1
Add the shell-shaped pasta known as conchiglie to a pot, pour in boiling water until all of the pasta is underwater and add a dash of oil (sunflower oil or vegetable oil etc. – to stop the pasta from sticking together) before mixing all together. This will need to be cooked over a medium heat on the hob for between fifteen to twenty minutes until it has softened to reach your preferred texture. Make sure to stir the pasta every few minutes so that it cooks evenly.


Step 2
If you are using frozen broccoli, place 150g of the florets into a pot and add boiling water until these are fully immersed. Cook these over a medium heat for between ten to fifteen minutes until they are fully cooked (but have not become too soggy or limp). If you are using fresh broccoli instead, cut about a third of it away from the full head, cut this into smaller pieces, wash it and cook it in the same way as the frozen broccoli. Store the remaining part of the broccoli head in the fridge.


Step 3
Drain the cooked pasta in a sieve and then place it back into the pot that it was cooked in (which should now be emptied of water). Mix in two tablespoons of pesto so that the pasta is coated evenly with it (conchiglie is preferred hear as it arguably holds the likes of sauces and pesto better). Next, mix in the broccoli florets too after draining them into a sieve (you may want to cut these into smaller pieces first). Serve and enjoy!
