Breakfast Muffins – Recipe of the Week

They say that breakfast is the most important meal of the day and with these breakfast muffins, you can start the day off right with this healthy and satisfying breakfast muffins recipe. Requiring only five simple ingredients (which can be mixed and matched if you would like to make this a vegetarian recipe for example), they are quick and easy to make.

Recipe Ingredients List

  • Button Mushrooms (eight)
  • Cherry Tomatoes (four)
  • Lean Ham (two slices)
  • Eggs (two)
  • Spring Onion (one)
  • Low-Calorie Cooking Spray

Step 1
Preheat your oven to 200°C (or 180° if you are using a fan oven). Spray some low-calorie cooking spray into a frying pan and put this over a medium heat. Wash, peel and slice the mushrooms and after doing so, lightly fry these in the frying pan.

Step 2  
Slice up the cherry tomatoes, spring onion and slices of ham too and add them to the frying pan also so that they fry lightly. When everything is lightly fried, evenly spoon the contents from the frying pan into the individual sections of a muffin tray.

Step 3  
Whisk the two eggs together in a jug and when whisked, pour these evenly into the individual sections of the muffin tray that contain your ham, mushroom, spring onion and cherry tomato ingredients. Place the muffin tray in the oven and then cook for between twenty to twenty-five minutes.

As you can see, this simple (but effective) recipe is completed in three easy steps and is a quick way to start your day with a great and filling recipe. You can also choose to leave out the ham or substitute it with another ingredient to make this as a vegetarian option too.
