Porridge Oat Scones – Recipe of the Week

This porridge oat scones recipe makes about eight scones which work as ideal healthy snacks – especially if you are craving something sweet to eat. With only four basic ingredients, they are quick and simple to make. You can also make them in batches to freeze them to have in stock for when you need.

Recipe Ingredients List

  • Porridge Oats (250g)
  • Greek Style 0% Fat Natural Yoghurt (250g)
  • Egg (one)
  • Bread Soda (half a teaspoon)

Step 1
You will need a mixing bowl, wooden spoon, ice-cream scoop and oven tray for this recipe. Preheat your over to 180°C (fan oven 160°C / gas mark 4).


Step 2
Mix all of the ingredients together in a mixing bowl. Make sure that they are mixed through evenly in the sense that everything mingles and merges together as best as possible. Note that when it comes to the porridge oats, you can use gluten-free oats if required. Likewise the Greek yoghurt can also be dairy and / or lactose free if necessary.


Step 3
Use an ice-cream scoop to scoop out the mixture from the bowl and add the scoops onto an oven tray. By using an ice-cream scoop, you ensure that each of the scones will be virtually the same size when cooked.


Step 4
Cook the porridge oat scones in the oven for 15 – 20mins or until they go an appetising golden brown colour. Leave them to cool before eating or freezing to use later.
