Recipe Ingredients List

  • Maple Syrup (300g)
  • White Cannellini Beans (150g)
  • Fine Oat Flour (125g)
  • Chocolate Chips (100g)
  • Unsweetened Applesauce (90g)
  • Cocoa Powder (85g)
  • Baking Powder (8g)
  • Vanilla Extract (one and a half teaspoons)

Step 1
Line a small / medium sized cake tin (ideally in a square or rectangular shape) with baking paper and preheat the oven to 180°. Drain and rinse the white cannellini beans and then pat them dry. Add these to the blender along with the applesauce, baking powder, cannellini beans, maple syrup and vanilla extract (along with a pinch of salt) and blend them together for one minute.

Step 2
After the above ingredients have blended, next add the cocoa powder and oat flour and blend again for one more minute. Check to ensure that there is no powdery residue on the inside of the blender (mix this in using a spoon if there is) and then blend everything again until you are left with a smooth and thick consistency. Before you remove the low fat brownie batter from the blender, use a spoon to mix in the chocolate chips – do not blend them.

Step 3
Pour the batter into the cake tin and spread it evenly into every corner. You can choose to sprinkle some chocolate chips on top of this if you wish and then bake them in the oven for twenty-five minutes. This will result in a more ‘gooey’ brownie so if you would prefer a more firm and crisp result, leave them baking for thirty minutes in total.

Step 4
When removed from the oven, the batter may still seem a bit wet but rest assured that it will continue to cook when out of the oven for a while. When fully cooled, cut them into slices and you can choose to serve them with some vanilla ice-cream or a flavour of your choice!
