Pumpkin Soup – Recipe of the Week
Such a seasonal dish (and with the ingredients appearing in nearly every supermarket at this time of year); pumpkin soup can be enjoyed as a lunch or dinner portion for a healthy and flavourful dish. It has a pleasing and vibrant orange colour and is a perfect example of a winter warmer recipe.

- Pumpkin (500g)
- Carrots (two)
- Onion (one)
- Milk (500ml)
- Chicken Stock Cube (one)
Step 1
Chop the pumpkin up and weigh 500g of the pumpkin flesh with a weighing scales. Note that you do not want any of the skin or seeds to be part of this 500g. Dice up the carrots and onion also so that they are cut into small chunks.
Step 2
Make the chicken stock using 400ml of water and then add this along with the diced carrots and onion to a large saucepan. Bring this to the boil and then let this simmer for around ten minutes until the carrots and onion have softened.
Step 3
Add the pumpkin and the milk and let everything simmer together for a further ten minutes. When done, remove the saucepan from the heat and allow the contents to cool. When cooled, blend everything until it becomes a smooth consistency.
Step 4
After blending, you can choose to portion the soup and freeze some that you want to save for later. If looking to enjoy it straight away, you can heat it up in a pot or in the microwave. Garnish with some black pepper and / or some pumpkin seeds if desired and then serve and enjoy!
