Omelette and Side Salad – Recipe of the Week

A classic and tasty dish packed with healthy protein from the eggs and nutrients from the salad; this omelette and side salad recipe is a great dinner or lunch option. It is made from ingredients you are sure to have at home and can be made in just a few simple steps to help reach and maintain your health and fitness goals.

Recipe Ingredients List

  • Eggs (three)
  • Lettuce Leaves (handful)
  • Cherry Tomatoes (two)
  • Avocado (optional)
  • Grated Cheddar Cheese (optional)

Step 1
Crack three eggs into a bowl and whisk them together either by themselves or optionally with a dash of milk, small piece of butter and salt and pepper to flavour. Note that you can also add some extra ingredients here to this egg mixture should you wish – like some cut up chunks of avocado for example. Wash the lettuce leaves and cherry tomatoes and cut the cherry tomatoes into halves.


Step 2
Add some oil to a frying pan and heat this over a medium heat. Once heated up, pour the egg mixture into the frying pan. Use a spatula to even the mixture out so that it cooks evenly while in the frying pan. After two minutes on one side, use the spatula to flip it over to the other side. You ideally want both sides to be yellow that is bordering on a golden brown colour.


Step 3
Add your lettuce leaves and cherry tomatoes to a plate and use the spatula to get the omelette onto the plate too (you may find folding this in half to be easier to manoeuvre). You can also dab the omelette dry with some paper towel / kitchen roll if you find there is still too much oil on it.
