Chicken Noodle Satay – Recipe of the Week

Recipe Ingredients List

  • Chicken Fillets (four)
  • Egg Noodles (275g)
  • Broccoli (340g)
  • Red Pepper (one)
  • Yellow Pepper (one)
  • Tin of Coconut Milk (400g)
  • Crunchy Peanut Butter (80g)
  • Garlic Cloves (two)
  • Lime (half)
  • Sweet Chilli Sauce (two tablespoons)
  • Dark Soy Sauce (two tablespoons)
  • Olive Oil (one tablespoon)

Step 1
Cook the egg noodles as per their packaging instructions.


Step 2
Heat the tablespoon of olive oil in a large pan / wok. Cut the chicken fillets into chunks and then cook these in the wok until they are cooked all the way through. Remove the chicken then and leave this set aside.


Step 3
Next, cut up the peppers, broccoli and garlic cloves and then stir fry these until they are tender. This can take anything up to five minutes and you can sprinkle them with water if they become too dry.


Step 4
Drain the noodles and add these along with the chicken back into the wok. Add in too the coconut milk, peanut butter, soy sauce, sweet chilli sauce and the juice from the half of lime. Continuously mix these ingredients together, stir fry for another few minutes and then serve!


A hugely tasty and satisfying dish; you can serve this for dinner or even portion it up for your lunch!
